Cherry Vanilla Loaf Cake

I feel like I completely missed out on cherry season.  When we went to our (new) town’s farmers market a couple weeks ago, the handful of places that had cherries posted big signs saying “last week for cherries.” What?! It was the first cherries I’d had all year!  Fortunately Whole Foods still had some in stock the other day, and I just so happened to have a brand new cherry pitter waiting at home.

Ellie was already perusing my baking books, so I joined her and decided to make a basic loaf cake with vanilla bean glaze.

I think she was a little frustrated that I took some cherries for baking because I’m pretty sure she would have eaten the entire bag herself in a matter of minutes if I’d let her.

This is a super simple cake (butter, sugar, flour, eggs…) with some quartered cherries folded in.  The glaze is just milk, powdered sugar, and half a vanilla bean.  What are you waiting for?

    Way to set your child up for an eating disorder. Why let her eat plain cherries when she could be eating cherries coated in fat and sugar?

    She doesn’t eat this cake. She eats the remaining plain cherries. Thanks for your concern, though!

    not to be redundant with all my other comments, but Ellie is just adorable. I’ve been making a chocolate cherry cake with whipped cream that is just delicious. Thank goodness for cherry pitters! If I get one more batch of cherries before we’re totally out of season, I’ll have to make this cake. I’ve been meaning to add cherries to Joy the Baker’s buttermilk cake, but I love the glaze you added to this one.

    I always feel kind of dumb remarking on children that look like their parents (cuz duh), but WOW, she looks so much like you!

    Also, I had no idea that something called a cherry pitter existed. This is is fantastic news. 🙂

    I’m so jealous of the cherry pitter…I have some cherries in my fridge and the amount of hassle de-pitting them is putting me off!
