Caramelized Onion and Goat Cheese Pizzas

Someone is now two months old!

She’s become very contemplative in her old age.

It seemed only fitting to celebrate with pizza, since we had it the night she was born. I got a copy of Artisan Pizza and Flatbread in Five Minutes a Dayat Foodbuzz, and I’m smitten already.

I made a half recipe of the “crisp yet tender” crust, but added a cup of whole wheat flour in place of one cup of bleached all-purpose. Β It is amazing how perfect the crust is (and very easy to work with!) with absolutely no kneading!

The recipe for these pizzas was originally written to make 4-inch pizzettes, but I made them a little bigger. It never ceases to thrill me how just a few simple ingredients combined the right way can taste truly fantastic (um, does that mean I need to get out a little more?)

    second, the pizza looks so good…and i happen to have all the ingredients on hand. i have a serious pizza addiction and love trying new combinations.

    Ellie is such a cutie! The pizza looks awesome. I’ve been going through the book, but haven’t made anything yet. I’m having a brief obsession with the cashew cheese that Gather puts on their vegan pizza, and I think I need to go eat it again to figure out to recreate it. It’s all gooey and melty, every kind of cashew cheese I’ve ever seen a recipe for is all thick like hummus. Goat cheese and caramelized onions looks like a terrific combination, and the pizzas look wonderful!

    I feel the same way about a few simple ingredients being fabulous! (Given that they’re the right ingredients). I think that this just means we have a super refined palate. For realz.

    And caramelized onions and goat cheese? Totally the right ingredients. Especially with a side of Ellie.

    She is seriously such a cutie – can’t believe she’s already 2 months old! Goat cheese & caramelized onions are one of the best combos ever, so obviously I love this pizza.
