Peanut butter-filled Chocolate Cookies

How is it possible that I’ve been married for TWO YEARS? I’m really starting to feel like an old lady! We’re not big on lavish gifts, and now that we’re living so far from home, we really don’t need to buy each other any more stuff, because not a lot is going to fit in our backpacks when we move on from Korea.

I realized the other day that I hadn’t made cookies once since we got here, which was almost 4 months ago. I knew that cookies would be a perfect anniversary gift for Mike because they would definitely be appreciated, but wouldn’t contribute to our already over-stuffed bags.

I started with a basic chocolate cookie recipe (modified from lululu at home), and put a little peanut butter mixed with powdered sugar into the middle. Then I formed it into a ball and rolled it in granulated sugar. The sugar gives a nice crunch, while the inside stays soft and chewy.

Because we had to work until 10 pm, we didn’t have too much of a celebration on our actual anniversary, but these were definitely a sweet way to end the day!

1/3 cup butter, softened
1 cup brown sugar
1 egg
1 tsp vanilla
1 1/2 cups flour
1/2 cup cocoa powder
1 tsp baking soda
1/2 tsp salt
1/3 cup plain yogurt

1/3 cup granulated sugar

1/4 cup peanut butter
1/4 cup powdered sugar

Preheat the oven to 350 F.
Cream the butter and brown sugar, then add the egg and vanilla and mix well.

In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt. Stir gently into the butter mixture, then add the yogurt and stir until combined.

In a small bowl, beat the peanut butter and powdered sugar together until smooth.

Put the granulated sugar on a plate or in a shallow bowl.

Take about 2 tbsp of chocolate dough and flatten it slightly between your fingers. The dough is pretty sticky, so it may help to either chill the dough first, dampen your fingers, or (which I prefer) press it slightly flat in the dish of sugar. Drop about 1/2 to 1 tsp of the peanut butter mixture onto the center, then pinch the chocolate dough around it so the filling is completely enclosed in chocolate. Roll into a ball in the sugar, so it is evenly coated, then place on a cookie sheet about 2″ apart (they spread a lot!)

Repeat with remaining dough (you may have some peanut butter filling left over).

Bake for 10-12 minutes, or until just set (so the cookies will be chewy), then cool on a wire rack.

Makes 12-18, depending on size.

    Oh, yum. I love it that you use ingredients in your recipes that I can find here in Belgium. This looks like a perfect use for the sort of peanut butter that I can find here. Chocolate, that’s no problem! 🙂

    Tried these with natural peanut butter – they didn’t spread much at all. A little dry probably because of the non-hydrogenated oils. Might just have to try them with Jif and see how they come out!
